Environmental Protection and Free-range Rearing

For generations, Señorío de Montanera has managed and protected more than 60,000 hectares of pastures in Extremadura and the Portuguese region, where their own 100% Iberian pigs are reared freely. Although it would seem, at first, that an Iberian acorn-fed ham is, by its very nature, (traditional rearing and natural process), is an organic product, the truth is that there are existing differences between a traditional Iberian ham and an organic Iberian ham.

Unlike traditional pigs, organic Iberian pigs are raised freely in pastures that are certified as organic farms, separated from the rest to ensure 100% natural production, and fed on acorns and natural pastures. Also, in order to ensure a 100% organic production, animals cannot eat any feed that is not certified as organic food before they begin the mountaineering season, which guarantees that they are free from genetically modified organisms (GMOs). Animal welfare is essential in this type of production, which is why organic Iberian pigs are able to enjoy four hectares per animal compared to the three hectares of a Señorío de Montanera traditional Iberian pig. In addition, veterinary treatments are very strictly limited and controlled, only allowing required vaccinations by Official Plans, always so, for the improvement of the animal’s welfare.

Organic, cured cold cuts: Beyond traditional Iberian acorn-fed products.

The production of organic Iberian products is carried out in a separate area and at a different time than the rest of traditional Iberian products. Behind this production is a long and extensive R&D process that aims to eliminate all additives and artificial preservatives, maintaining all the quality and pure Iberian taste, characterized by Señorío de Montanera. Therefore, Señorío de Montanera organic Iberian products are free from additives and artificial preservatives, and are also properly labeled with the European Union organic logo.

The organic Iberian acorn-fed hams and shoulder hams of Señorío de Montanera entered the market at the end of 2017, and were very well received, especially in the European market (mainly, United Kingdom and France).
