Señorío de Montanera, leaders in pure iberico ham P.D.O. Dehesa de Extremadura, has launched a new edition of “The iberico Pig Club”. This initiative is a tribute to our origins, as we are recovering one of the milestones by which we became known to consumers 27 years ago: the sale of a whole iberico pig.

Through our online store, and with limited availability (until 31 May), it is possible to purchase half of an acorn-fed pure iberico pig (21 kg of meat and processed products) or a whole pig (32 kg of meat and processed products). Subsequently, each of your cured pieces will be shipped separately and at periodic intervals, according to the curing period of each product, from June this year to November 2024. This year, for the first time, each shipment will be paired with a different wine from the Valladolid winery Cepa 21, one of Ribera del Duero’s flagship wineries. In addition, with the first shipment, customers will receive an illustration poster by the young artist Pils Ferrer, inspired by the dehesa pastures.

This action, based on the traceability of all our products and processes, places value on iberico culture and the patience associated with traditional iberico pig slaughter methods. In this way, it is possible to savour the different traditional iberico flavours from our homes, just like people did in the past, when the products of the pig slaughter, or matanza, would each arrive at the family table at their own pace.

Señorío de Montanera comprises more than 60,000 hectares of pastures, cared for and protected by our own livestock farming partners, who have been dedicated for generations to sustaining this unique ecosystem and preserving the purity of the iberico breed. Our pure-bred iberico pigs, selected and cared for from their origin, are reared in this natural setting, in freedom, and enjoy more than 3 hectares of pasture per animal.

This is how Señorío de Montanera controls and ensures the highest quality of its premium products across the entire production chain: from the rearing of the iberico pig in the dehesa pastures, to producing the final products (hams, shoulder hams, cured sausages and pork loins). The 100% iberico products are exclusive and limited, subject to the montanera season between November and March, which is when the iberico pigs live in freedom in the dehesa, feeding exclusively on acorns and natural pastures. This year, the montanera season in the Dehesa de Extremadura has been exceptional in terms of the quantity and quality of the acorns, which guarantees the premium quality of this campaign’s iberico products.

To mark our 25th Anniversary, at Señorío de Montanera, we decided to pay tribute to our origins and relaunch this past year one of our very first commercial successes: The Iberico Pig Club .

This initiative enables customers to buy an acorn-fed 100% iberico pig certified by the P.D.O. Dehesa de Extremadura at the end of the montanera season, which is when iberico pigs feed exclusively on acorns and natural pastures in the dehesa. Subsequently, the best iberico products are shipped separately and at periodic intervals, according to their optimal curing period. In this way, it is possible to savour the acorn-fed 100% iberico flavour just like people did in the past, when the products of the traditional pig slaughter, or matanza, would each arrive at the family table at their own pace.

The Señorío de Montanera Iberico Club is only available for a limited period, until 31 May. Customers can choose between receiving the whole pig (32 kg of acorn-fed pure iberico pork, €1,695) in seven shipments, or the equivalent of half of a pig (21 kg, €995) in four shipments.

Customers will receive the products at periodic intervals, starting with the acorn-fed 100% iberico cured sausages in June 2022, and ending in November 2024, with the iberico ham P.D.O. Dehesa de Extremadura. With this “pre-ordering” system, customers benefit from savings of up to 40% on the market price of the total of products shipped, compared to buying each product separately.

New for this edition, each shipment will be paired with a wine from the boutique winery Cepa 21, one of Ribera del Duero’s flagship wineries and managed by José Moro. This winery combines the tradition of a century-old legacy with the essence of the Tempranillo grape variety and the virtues of a land that has always been reflected in its wines, which are conquering the world.

Some of the wines that will be paired with the most exquisite acorn-fed 100% iberico products will be exclusive to the Señorío de Montanera Iberico Club, as they are part of a collector's edition made especially for this project.

Buy a whole iberico pig

If you buy a whole pig, the first of the seven shipments will arrive in June 2022 and will include two Chorizo Vela (200-250 g/each), two Salchichón Vela (200-250 g/each), two Sobrasadas (300 g/each), two blood sausages (300 g/each) and a cured presa pork loin (350 - 400 g/each). As for the wine, it will include a bottle of Cepa 21, the alma mater of Bodegas Cepa 21, made from the Tempranillo variety with the utmost respect. This wine is perfect for pairing with these products due to its medium body and persistence in the mouth, which helps balance the spicy notes and intense flavours of the iberico products.

Later, in July 2022, customers will receive one Salchichón Cular (1-1.2 kg), one Chorizo Cular (1-1.2 kg) and a cured tenderloin (300-350 g). On this occasion, the shipment will include a bottle of Hito, the youngest red wine from Bodegas Cepa 21, which combines perfectly with the fat and powerful flavour of the cured products of this second delivery, due to its fruity aroma, balanced acidity, freshness and tannic notes.

Malabrigo is the wine selected for the October 2022 shipment: one morcón (800-900 g) and one Lomo Doblado (1-1.1 kg), the latter being one of the great gastronomical treasures of Extremadura, its traditional recipe having been recovered exclusively by Señorío de Montanera. The woody notes of Malabrigo (the name of the plot that designates the most emblematic wine of Cepa 21), which results from its ageing in French oak barrels, its black fruit and its smoky notes, combine perfectly with the cured flavours of the marinade and the succulence of the cured sausages.

In 2023, customers will receive two acorn-fed 100% iberico shoulder hams P.D.O. Dehesa de Extremadura, weighing approximately 5 kg. The first one will be shipped in July, alongside a bottle of Hito Rosado, a fruity, light and super-balanced rosé wine that pairs perfectly with the aromas of the acorn-fed shoulder ham without masking its flavours. The second shoulder ham will reach you in November, this time alongside a magnum of Cepa 21 wine.

And finally, in 2024, two acorn-fed 100% iberico hams P.D.O. Dehesa de Extremadura of 8 kg, a true gem that represents centuries of tradition and know-how (the first will arrive in June, with a magnum of Hito, and the second in November, with a magnum of Malabrigo). Both Hito and Malabrigo pair exceptionally well with acorn-fed ham. The former, for its freshness and spicy sweet notes, which enhance the fatty feel of the ham. The latter, for its balance and elegance, as well as its crispness and medium body, which does not mask the nuances of the iberico product.

Buy half of an iberico pig

If you buy half of a pig, you will receive four deliveries. In June-July 2022, two Chorizo Vela (200-250 g/each), two Salchichón Vela (200-250 g/each), two Sobrasadas (300 g/each), two blood sausages (300 g/each) and one cured presa pork loin (350-400 g/each), one Salchichón Cular (1-1.2 kg) and one Chorizo Cular (1-1.2 kg), all with a Cepa 21 bottle of wine (0.75 l). In October 2022, one morcón (800-900 g) and one Lomo Doblado (1-1.1 kg), with a bottle of Hito wine (0.75 l). Finally, in November 2023, an acorn-fed 100% iberico shoulder ham P.D.O. Dehesa de Extremadura (approx. 5 kg) alongside a bottle of Malabrigo wine (0.75 l), and in November 2024, an acorn-fed 100% iberico ham P.D.O. Dehesa de Extremadura (approx. 7.8-8 kg.), with a magnum of Malabrigo.

With the first shipment, customers will receive a poster and a calendar (with details of the different shipments of each of the pieces included in the order) illustrated by the young collage artist Pilar García-Ferrer (Madrid, 1991), known on Instagram and in lifestyle media as Pils Ferrer. An architect by trade, her job has revealed her true artistic sensitivities, which she translates into a very visual, beautiful and sophisticated style, combined with a touch of humour that has made brands like Chanel, Rabat or Zadig & Voltaire fall in love with her work. Her work with Señorío de Montanera is her first project with an iberico brand.

The scene is not only inspired by the aromas and colours of the dehesa pastures, the last natural Mediterranean woodland, but also by the enjoyment associated with the consumption of iberico products. It is a tribute to the nature of a unique ecosystem, to animal freedom and to pure hedonism. In the words of the artist, “all contact with nature is essential to my work. For this work, I drew inspiration from the bucolic charm of the countryside, from getting away from it all; I wanted to portray this feeling through two people deep in thought, self-absorbed, and a couple enjoying all the fun nature can provide”.
