Señorío de Montanera launches a new packaging system for its sliced cured meats— they’re just like freshly sliced!

Señorío de Montanera has managed to improve the traditional method of packaging 100% acorn-fed Iberian ham sliced with a knife, with the implementation of a new system guaranteeing maximum quality that maintains the taste and properties of the product as if it had just been cut.

Señorío de Montanera is aware of the professional needs in catering and of an increasingly demanding gourmet public. It has been a pioneer in developing modified atmosphere packaging for its sliced acorn-fed Iberian products, with the aim of maintaining all their flavour and properties for up to six months, as if they had just been cut. The modern concept fuses technological innovation with a sense of tradition and respect for the artisan values that characterise the brand.

By means of the meticulous attention paid to each part of the process and the updated technology applied when developing the packaging (controlled clearing of volume gases and thermofilm trays free of Bisphenol A), it is possible to keep all the strong olfactory-taste nuances of each one of the slices intact, while avoiding distorting their texture, freshness, intramuscular fat and the intense red colour that is so representative of Señorío de Montanera 100% acorn-fed Iberian ham.

This way, and due to the special composition added to the trays, the oxidation process, characterised by a change in appearance, is prevented and the useful life is prolonged, preserving it in a perfect state of texture and flavour; free at all times from any smells or flavours of synthetic materials (plastics or resins).

Furthermore, unlike a traditional vacuum packing system, there is no need to use interlevel plastics to separate the contents, nor to subject the product to thermal processes to facilitate the separation of its slices as is the normal custom of immersing the container in hot water before opening.

The new packaging format for Señorío de Montanera sliced Iberian products in a modified atmosphere is a real innovation for catering and hotels, thanks to the many advantages it offers when it comes to controlling, handling and preserving the product. But also for the final consumer, who will be able to taste the flavour of freshly-sliced pure Iberian products for up to six months at home.

The new Señorío de Montanera slices in a modified atmosphere are now available from our online shop and are sold in various formats: 100% acorn-fed Iberian ham, D.O. Dehesa de Extremadura (80 g.); 100% acorn-fed Iberian ham (80 g.), 100% acorn-fed Iberian pork shoulder (80 g.); 100% acorn-fed Iberian folded loin (100 g.); and the rest of the range of acorn-fed Iberian sausages such as loin, chorizo or salchichón.
