Cured iberico tenderloin
The acorn-fed Iberico tenderloin is an exclusive product of Señorio de Montanera. It is made with acorn-fed 100% Iberian pigs following a traditional formula: garlic and salt, light touches of garlic and pepper, and no paprika so as not to mask the distinctive acorn flavour.
It’s renowned for its pure and uniform cut with virtually no fat whatsoever. Due to its diameter, two pieces are stuffed together, with a technique similar to the elaboration of the Iberico Lomo Doblado, so that once cured it has a greater diameter and juiciness.
