Señorío de Montanera’s Vintage Selection is a limited edition of one hundred 100% Iberian Acorn-fed Hams with Designation of Origin of Dehesa de Extremadura, individually numbered and carefully selected from the 2013-2014 montanera season, the best of the last ten years.
Just as, in the world of wines, the term Vintage refers to unique vintages resulting from exceptional harvests, Señorío de Montanera’s Vintage Selection is the fruit of an extraordinary montanera, the 2013-2014 season, considered to be the best of the last 10 years. This exceptional vintage, outstanding in terms of the quality and quantity of the acorns, has yielded the collection of pure Iberian gems of Señorío de Montanera; a true gastronomic luxury under the name “Vintage Selection”, consisting of one hundred unique and numbered 100% Iberian Acorn-fed Hams with Designation of Origin of Dehesa de Extremadura, carefully selected from the 2013-2014 montanera season.
Each numbered pure Iberian Ham of the Vintage Selection is presented in a an exclusive box made of wood and cork obtained from the pastures of Extremadura, and includes a traceability passport with the information of origin of each exclusive ham, an apron and a complete set of professional knives (including a carving knife, a paring knife and sharpener).
The Vintage Experience is rounded off with an invitation for four guests to visit the pastures of Señorío de Montanera during the montanera season, with a tasting of Iberian acorn-fed products.

A unique combination of natural factors made the 2013-2014 Montanera season a very special one, in terms of the quantity and quality of the acorns, making it the best of the last 10 years. The pure Iberian pigs that have yielded the Vintage Selection are from this special vintage and, have also benefited from a double montanera. A traditional method that allows the Iberian pigs to live amongst the pastures from the previous montanera, remaining there the entire year until the arrival of the next montanera season, and thus benefiting from more than 3 hectares of pasture per animal.
The slow curing process, over four years, in natural curing cellars excavated into the rock, favours the concentration of aromas, while the flavours are refined to achieve a unique sensory experience.
An exceptional raw material from a special montanera season, the double montanera, a traditional method, followed by more than four years in the still, quiet and shade of the natural curing cellars, combined with careful artisan production of each individual piece - this is what is required to refine the flavours and concentrate the aromas of the unique hams that form this Vintage Selection.
The control of traceability carried out by Señorío de Montanera on all its products makes it possible for consumers to select the ham of their choice from the Vintage Selection, according to weight, farm of origin and number of montanera days, through the link www.vintage.senorio.es.
