The most recent edition of Salón de Gourmets , which took place from the 8th to the 11th of April in Madrid, broke its attendance records with more than 100,000 professional visitors. Señorío de Montanera, a leader in pure Iberian products out of the Dehesa de Extremadura Designation of Origin capitalised on the event’s success to present its latest developments in the Iberian sector with gourmet products destined for haute cuisine.
Señorío de Montanera allocates more than 40% of its profits each year to R&D&I projects, with the aim of adapting a traditional Iberian sector to the needs of a gourmet market that is ever more demanding and constantly evolving. The lines of work developed in recent research projects mainly focus on their commitment to bring back traditional cured cold cuts that have disappeared from the retail,channel, as they did in their day with Iberian acorn-fed Lomo Doblado or the Solomillo Embuchado; in the search for healthier and more natural recipes , through eliminating allergens, artificial additives and reducing the salt in their Iberian products; as well as in the research and development of new formats that improve the shelf life of sliced Iberian cold cuts and maintain the maximum quality of exquisite pure Iberian products.
Organic Iberian hams and cured cold cuts
Señorio de Montanera has developed an exclusive line of organic Iberian products, , of using agriculture and livestock based on 100% natural resources, and a careful traditional process free from nitrites and artificial additives. In order to promote this new line of 100% natural Iberian products, the Señorío de Montanera stand was brimming with small oaks to captivate the attention of those interested in this organic initiative, , with the objective of conveying the need to replant the future of the pastures, which are essential to the preservation of our ecosystem
The Señorío de Montanera’s pure organic Iberian ham was awarded a star in the Great Taste Awards in London 2017, considered the “Oscars” of gastronomy, for its excellent natural flavour. Now it’s launching its line of 100% organic , Iberian cured cold cuts, which include Iberian acorn-fed organic cured loin, salami and sausage; that have the European Union’s organic food certification.

Señorío de Montanera has managed to improve the traditional method of packaging 100% acorn-fed Iberian ham sliced with a knife, , with the exclusive implementation of a new modified atmosphere packaging system ; that guarantees maximum quality and maintains the taste and properties of the product as if it had just been cut. With this revolutionary packaging system, Señorío de Montanera has managed to improve the end quality of their sliced products, , by keeping the product in a perfect state of texture and flavour, free from the smell and taste of synthetic materials and without having to resort to plastic sheets to enable the separation of slices. During the celebration of Salón de Gourmets, , the format of the new Señorío de Montanera Iberian sliced products, packaged by the modified atmosphere system raised curiosity among all visitors; furthermore, during the sensory tasting at the stand, guests were unable to distinguish the freshly cut Iberian ham from the one packaged in a modified atmosphere.
Restaurants and Señorío Stores
On the occasion of the recent inauguration of both the Restaurante Señorío in Sevilla and the Señorío Store in Madrid (on C/ Padre Damián, in addition to the already well-known Señorío Store in the district of Chamberí), Señorío de Montanera held a live cooking session at its Salón de Gourmets stand featuring one of the most representative tapas of these new establishments. Chef Antonio Yerga, head of Restaurante Señorío in Sevilla and trained in Michelin-starred restaurants such as Annua (Cantabria) and Les Cols (Girona), prepared a delicious Señorío de Montanera Iberian Sirloin tartar on the spot. The taste of this unusual recipe was a pleasant surprise to the guests, as it is not common to consume pure Iberian pork prepared with this current avant-garde cuisine technique. As a result of this gourmet event, we were able to enjoy the company of well-known bloggers including Blog Hedonista, El Blog de Celeste, David por Madrid and Sofisfood; great friends of Señorío de Montanera.
