The Señorío de Montanera acorn-fed ham comes from pure Iberian pigs, reared on acorns during the montanera season in the pastures. Its slow curing process in natural cellars carved into the rock gives it that distinctive aroma and unique flavour that sets it apart as the very best Iberian acorn-fed ham.
Produced following traditional methods during a long process of salting, drying and curing that lasts more than 3 years. The 100% Iberian acorn-fed ham has unique qualities that make it an exclusive, one-of-a-kind product: its presence is unmistakable - the black hoof, slender shank, elongated shape, “V” shaped serrano cut, yellowish covering of fat, and natural surface moulds. On cutting, it has an intense red colour, with highly-marbled intramuscular fat which is almost translucent. Its aroma is intense and penetrating, and the flavour succulent, rounded, lingering and slightly salty, with sweet notes.
