Acorn-fed 100% Iberico Lard Coated Loin

The acorn-fed Iberico Lard Coated Loin (Iberico Lomo Doblado) is one of Señorio de Montanera’s greatest treasures. This is a unique and exceptional product. Being twice as thick as a traditional cured pork loin, it is very succulent. It’s completely artisan production requires a long curing period, which usually lasts more than six months.

Its delicate seasoning and the absence of paprika give it a pronounced "acorn" flavour like ham, which isn’t hidden by the seasoning. Once cut, it has a red-purple colour, intensely marbled with streaks of fat.

At Señorio de Montanera, we have acquired a commitment to the gastronomic heritage of Extremadura. The Iberico Lomo Doblado is based on a traditional recipe from southern Extremadura. Given that its production is entirely handmade, this unique product had all but disappeared from our memory because of a lack of generational transmission. It took artisanal know-how to recover and perfect this recipe through substantial research and development work, and the fruit of this labour sings sensory qualities capable of conquering any palate.
