With a livestock legacy spanning generations, Señorio de Montanera was conceived in 1995 as the brainchild of a group of traditional Iberian breeders in Extremadura, concerned with preserving the purity of the Iberian breed and sustainability of the dehesa.

With a livestock legacy spanning generations, Señorio de Montanera was conceived in 1995 as the brainchild of a group of traditional Iberian breeders in Extremadura, concerned with preserving the purity of the Iberian breed and sustainability of the dehesa. The tradition continues today, driven by a trade carried on across generations. Our purely artisanal production processes are based on the quality of an extraordinary raw material and the mastery of expert hands dedicated to caring for a unique product with its own personality: the best acorn-fed Iberico Ham. / Spanish Iberico Ham.

At Señorio de Montanera, we take our responsibility to care for our local traditions very seriously.

We have acquired a commitment to the gastronomic heritage of our lands: breeding and creating products from pure acorn-fed Iberian pigs. Our greatest legacy resides in preserving traditional livestock and ensuring the highest quality throughout the entire production process, from the very outset until achieving our very best Iberico Ham.

Señorio de Montanera is currently the leader in the production of pure Iberico Hams under the Dehesa de Extremadura Designation of Origin and is available in more than 25 countries around the world, with a significant presence in Japan, Korea, the United Kingdom, France and Canada.

PREMISES

Extremadura, Andalusia and Alentejo

Our main premises are located in Salvaleon, in the south of Extremadura, the heart of the Jerez de los Caballeros mountain range. It is the largest area of holm oaks in the Iberian Peninsula. This is one of the flagship areas of the Iberian pig sector, for preserving the traditional production methods of Iberian products and integrating all phases of production in an efficient and controlled manner.

Salvaleon

Our main premises are located in Salvaleón, south of Extremadura, in the heart of the Jerez de los Caballeros mountain range, the largest area of holm oaks in the Iberian Peninsula. This is one of the flagship areas of the Iberian pig sector, for preserving the traditional production methods of Iberian products and integrating all phases of production in an efficient and controlled manner.

Here, we find the slaughterhouse, cutting room, nine curing cellars carved into the rock, eight natural drying sheds in the upper floor, three salting chambers and sixteen post-salting cold rooms. It also houses the cured sausage factory, and three new drying sheds used exclusively for cured sausages, as well as a new cellar for slowly maturing them. In total, 240,000 Iberian ham and shoulder ham are produced and cured in the different rooms.
